Get ready to rustle up some serious protein, taco-style. Smash ground beef in your pan until it’s got a crispy, crusty sear, then chop it up and pile it into taco shells paired with Old El Paso™ Traditional Refried Beans for a mighty-fine protein two-step. Add a drizzle of cool Greek yogurt lime crema (yeehaw, protein #3!), and you’re ready to go. Got extra crema? Dip away, cowboy.
In a small bowl, stir together Greek yogurt, lime juice, 1/4 cup water, and 1 teaspoon taco seasoning mix. Set aside.
Heat a 10-inch nonstick skillet over medium-high heat. Add ground beef and press into an even layer, covering the bottom of the skillet. Cook undisturbed for 6 to 7 minutes, until deeply browned and crisp on the bottom. Flip and cook 3 to 4 minutes more, until browned and cooked through.
Break the beef into bite-size pieces. Stir in remaining taco seasoning mix and 3/4 cup water. Bring to a simmer and cook uncovered for 2 to 3 minutes, stirring occasionally, until the liquid has thickened and coats the beef.
Spread about 2 tablespoons of refried beans into each taco shell, divide the beef among the shells, and serve with toppings of choice and a drizzle of Greek yogurt sauce.
Pile on the fixin’s with shredded lettuce, diced tomato, red onion, and shredded cheddar cheese. Want even more? You bet your taco. Try sliced green onion, sliced jalapeño, or a drizzle of your favorite hot sauce.
For a richer sauce, reach for full-fat Greek yogurt. For a lighter ride, go with nonfat.
A little extra heat never hurts a taco. Stir some hot sauce into the Greek yogurt sauce for a spicy li’l kick.
