Ingredient List

  • 1/4 cup from 1 container (7 oz) Old El Paso™ Crema Mexicana
  • 1 package Old El Paso™ Barbacoa Beef Street Taco Kit
  • 1/2 lb ground beef (at least 80% lean)
  • 1/3 cup water
  • 1 cup from 1 package (7 oz) Old El Paso™ Shredded Mexican Style 4 Cheese Blend
  • 1/4 cup sliced green onions (4 medium)
  • 2 tablespoons chopped fresh cilantro leaves
  • Lime wedges, if desired

Preparation

  1. Heat oven to 425°F. Line sheet pan with cooking parchment paper. In small bowl, mix Old El Paso™ Crema Mexicana and 1 tablespoon of the taco seasoning mix (from taco kit).
  2. In 10-inch nonstick skillet, cook beef over medium-high heat 4 to 6 minutes, stirring frequently, until thoroughly cooked; drain. Stir in water and remaining 2 tablespoons of the taco seasoning mix (from taco kit); heat to boiling. Reduce heat; simmer uncovered 30 to 90 seconds, stirring frequently, until thickened. Remove from heat. Let cool 5 minutes; stir in cheese and green onions.
  3. Place about 2 tablespoons beef mixture on bottom third of each tortilla (from taco kit). Roll up tightly; place seam-side down in pan, about 1 inch apart. Bake 7 to 9 minutes or until filling is hot (at least 165°F) and taquitos are crispy.
  4. Serve with mild salsa verde sauce (from taco kit) and crema mixture. Top with cilantro. Serve with lime wedges.

Expert Tips

  • For extra-spicy mini beef taquitos, substitute Old El Paso™ Shredded 3 Pepper Cheese Blend for the Old El Paso™ Shredded 4 Cheese Mexican Blend.
  • For a pretty sour cream topping, spoon crema mixture into resealable food-storage plastic bag; cut one corner, and squeeze a zigzag of the mixture on top of the taquitos before topping with the cilantro.
  • For best results, roll up tortillas as tightly as possible. Press each taquito down on pan slightly. Also, be careful transferring pan to oven to avoid accidentally opening the taquitos.
