Preparation

  1. In a small bowl, stir together Greek yogurt, lime juice, 1/4 cup water, and 1 teaspoon taco seasoning mix. Set aside.

  2. Heat a 10-inch nonstick skillet over medium-high heat. Add ground beef and press into an even layer, covering the bottom of the skillet. Cook undisturbed for 6 to 7 minutes, until deeply browned and crisp on the bottom. Flip and cook 3 to 4 minutes more, until browned and cooked through.

  3. Break the beef into bite-size pieces. Stir in remaining taco seasoning mix and 3/4 cup water. Bring to a simmer and cook uncovered for 2 to 3 minutes, stirring occasionally, until the liquid has thickened and coats the beef.

  4. Spread about 2 tablespoons of refried beans into each taco shell, divide the beef among the shells, and serve with toppings of choice and a drizzle of Greek yogurt sauce.
